Frozen Breakfast Burritos

I freeze these because my mornings are fake. The stream says noon, my body says sometime after 2am, and if I don't eat I get mean in a way that ends up clipped. The stack behind the ice trays is the only plan I've actually kept. Skip a batch and I'm back on gas station taquitos, and I already lived that year.
Dollar store. One pan. That's the whole religion. Tube sausage, the bag of shredded cheese that always looks a little embarrassed, eggs, frozen hash browns so nobody is peeling potatoes like they have a life. Bottom-shelf tortillas, the kind that behave if you warm them and shatter if you don't. I am not buying sixteen ingredients to feel domestic. I am buying whatever still tastes like breakfast after a month next to leftover energy drinks.
The stake is stupid and real. Full stack, I can go live and be a person. Empty freezer, I talk over a warm Red Bull and get sloppy, and sloppy is how you say the thing you have to apologize for in the VOD. So I make eight while the pan is already a mess. Future me gets one less fight. That's the inheritance.
Ingredients
- 1 poundbulk breakfast sausage, or links with casings removed
- 1 tablespoonneutral oil, if the pan is dry after draining
- 1 smallyellow onion, diced
- 2 cupsfrozen diced hash browns
- 1/2 teaspoonkosher salt
- 1/2 teaspoonblack pepper
- 1 teaspoonchili powder
- 8 largeeggs
- 2 cupsshredded cheddar cheese
- 8burrito-size flour tortillas, about 10 inches
- to tastehot sauce, for serving
Method
- Set a large skillet over medium heat. Add the sausage and cook, breaking it into small crumbles, until browned with no pink left and an instant-read thermometer reads 160°F (71°C), 6 to 8 minutes.
- Spoon out the excess fat, leaving about 1 tablespoon in the pan. Add the oil only if the pan looks dry. Add the onion and frozen hash browns and cook, stirring occasionally, until the potatoes are browned at the edges and tender, 8 to 10 minutes. Season with the salt, pepper, and chili powder.
- Beat the eggs. Pour them into the skillet and scramble with the sausage and potatoes until fully set, with no liquid egg left, and the mixture reaches 160°F (71°C), 2 to 3 minutes. Take the pan off the heat.
- Stir in the cheese until it melts. Let the filling cool for 10 minutes so it does not steam the tortillas.
- Warm each tortilla in a dry skillet over medium heat for about 15 seconds per side, or microwave for 15 seconds, until pliable.
- Divide the filling evenly among the tortillas. Fold the short sides in, then roll each one tightly into a burrito.
- Wrap each burrito tightly in plastic wrap, then foil, or seal them in a freezer bag with the air pressed out. Freeze in a single layer until solid, then stack. Use within 1 month.
- To eat, unwrap a frozen burrito, set it on a plate, and microwave on high for 2 minutes. Flip and microwave 1 to 2 minutes more, until the center reaches 165°F (74°C). Rest 1 minute. For a crisper tortilla, brown it in a dry skillet for 1 minute per side. Serve with hot sauce.
A month is the honest freezer window, less if the freezer is a frost museum and the bags never get closed. Leave them flat until they're solid or they fuse into one sad brick. Hot sauce goes on after, never in the wrap, unless you like a steamed tortilla.
Coffee if the pot isn't already a problem. A pickle from the jar that's open. Eat it standing over the sink when every plate is dirty. They usually are.
